The best remedy for me to shoo away any blues is to cook. There’s something comforting about mixing ingredients, using your instincts to what tastes best and share what you’ve made with others. This week has been hard as you can see from my previous post, but I am ready to get back on track and keep on blogging!
I decided to invite my boyfriend, Tyler, to the weekly cooking & photographing fun. My dear friend Izzy from Veganizzm, was there too and this week, I am going to share with you a recipe for a vegan pistachio coconut smoothie.
I called this recipe a smoothie, but you can eat it as a chilly soup with a spoon (i love to eat it that way).
What you’ll need
3/4 cup pistachios
1/2 can coconut milk (frozen)
1/2 cup soy milk
1/3 cup sugar
Make it
Add the pistachios, frozen coconut milk, soy milk and sugar to a blender and blend until pistachios are finely chopped. Add sugar to taste and enjoy!
Ever since I was little, pistachios are my favorite nut. This is a perfect dessert to be served after a huge heavy meal because it doesn’t feel like dessert. Below is my boyfriend posing for the camera ; )
